Basmati rice and shitake mushroom pilaf

Basmati Rice & Shitake Mushroom Pilaf

Organic Ingredients:

  • 2 cups Basmati Brown Rice

  • 1 cup fresh Shitake mushrooms, diced finely

  • 1 medium leek, chopped

  • 1 ¾ cups oil free organic vegetable broth

  • 1 ¾ cups of water

  • Pink salt to taste 

  • Dried Thyme to taste

Instructions:

  1. Sautee leek and mushrooms in 1-2 TBSP coconut oil until soft and the mushrooms have released their moisture. 

  2. Add rice, broth, water, and thyme.  Bring to a boil then reduce heat and simmer uncovered for 30 minutes or until liquid is all evaporated. 

  3. Remove from heat, cover and allow to rest for 5-10 minutes.  Fluff, season with salt, and serve.

    Make it dramatic and use Black Forbidden Rice!
