RICE & SHITAKE MUSHROOM PILAF
Basmati Rice & Shitake Mushroom Pilaf
Organic Ingredients:
2 cups Basmati Brown Rice
1 cup fresh Shitake mushrooms, diced finely
1 medium leek, chopped
1 ¾ cups oil free organic vegetable broth
1 ¾ cups of water
Pink salt to taste
Dried Thyme to taste
Instructions:
Sautee leek and mushrooms in 1-2 TBSP coconut oil until soft and the mushrooms have released their moisture.
Add rice, broth, water, and thyme. Bring to a boil then reduce heat and simmer uncovered for 30 minutes or until liquid is all evaporated.
Remove from heat, cover and allow to rest for 5-10 minutes. Fluff, season with salt, and serve.
