Veggie Burger

Ingredients:

  • 1 ½ cups of gluten free oat flour

  • 2 cups oil free vegetable stock

  • ½ cup butternut squash puree

  • ¼ bunch parsley chopped

  • 1 TBSP fresh thyme, chopped

  • 1 TBSP fresh oregano, chopped

  • 1 TBSP raw tahini

  • 1 cup shitake mushrooms (chopped fine)

  • Pink Salt to Taste


Instructions:

  1. Place the flour, vegetable stock, butternut squash puree, parsley, thyme and oregano  in a pot on the stove.  Heat on high until boiling, reduce the heat to low, cover and simmer for 20 minutes or until the liquid is absorbed.

  2. Remove from the heat, stir in the tahini paste, mushrooms and season with salt.  Set aside until cool enough to handle.

  3. Form the flour mixture into 4-6 patties.

  4. Line a pan with parchment paper.

  5. Bake in the oven at 350F for 10 minutes on each side.
